It’s no secret I’ve recently fallen in love with taking better care of myself. Self-care is extremely important on all levels, I’m only sorry it took this long for me to figure it out. I’d realized that while I had evolved with the food my family consumes, I still wasn’t monitoring my own health journey. I call it a journey because I’m not interested in just losing pounds or gains; I’m interested in feeling good. I want to feel good in my jeans, and I want to feel good running around with my boys in the park. This all starts with gym quality management at home.

I’ve invested in better food, learning where I can skimp on calories, and where I should splurge on pennies to ensure I’m eating whole foods. Another investment I’ve made is in quality at-home gear. Road Tripping with the 2018 Toyota Camry

When my friends and I were invited to drive north to Orlando and check out Universal Studios I jumped into road trip mode. Scaling back as much as possible these days I decided to throw everything into one backpack to keep it simple. I received word that I would be testing out the new 2018 Toyota Camry, so I thought I’d better make room for a small space.

I didn’t give my friends the heads up and they did in fact pack luggage, I thought it might be tough, but we’ll make it through. That is until I got a load of the trunk space on this beauty! Let’s start with how roomy and cozy it was in the backseat, so I was surprised at how there could be that much trunk space!

This made the trip a lot easier and way more comfortable since there were three of us and at all times there would be someone sitting in the backseat. When it first pulled up, I thought there were definitely some slight body changes since I owned a Camry a couple of years ago. But the inside was an entirely different cockpit!

I call it that because that’s exactly what this beauty felt like. This baby had plenty of power (the first Camry to pack this amount of horsepower). We arrived in Orlando in under three hours (going the speed limit of course).

The interior was beautifully crafted and such fun to drive. The large screen was easy to maneuver and at my fingertips throughout the ride (even though I couldn’t figure out how to plug-in an address). Electric blue really isn’t my color, but it served perfectly as we sped down the highway on our little getaway. I’m impressed by all of the time that was dedicated to the details of this vehicle. The Camry insignia lights up at night, illuminating your footing for easy access.

The upgraded grill gave it great style and impressed my husband and two boys. It would even fit our two car seats in the back for a family road trip if needed. It was a smooth ride and really easy to park.

Not to mention easy on the eyes! The 2018 Camry XLE was a lot of fun to drive and caught the attention of passersby everywhere we went all week. I would definitely recommend this for a guys’ or girls’ trip.

One of our family resolutions this year is to eliminate the amount of meat products we consume. We’ve recently cut back on red meat, but we’re incorporating more of a nutritional, healthful protein into our lifestyle as of late, and I’m loving it. The nutrition that comes from fresh, sustainably sourced seafood is well documented, not to mention I feel great after every meal.

I’ve spent the better half of the first month of 2018 eliminating carbs and sugar. I have more energy, sleep better, and the inches I’ve lost off of my waistline isn’t a bad perk either. So the journey to a heart healthy protein was only natural. The way my food is sourced has become increasingly concerning for me over the years, its important that it is always wild, and responsibly sourced. I chose Alaska Salmon for this dish. Salmon can be tricky for some, they either love it or hate it. Well, I’ve found a way that anyone can enjoy a good salmon dish. Simple and fresh, this recipe is sure to please. I use four six-ounce pieces of wild Alaska Salmon (skinned) and sear it to perfection. Searing salmon creates a delicious char that can lure even the biggest salmon skeptic.

Most often people shy away from salmon because of its texture. If it isn’t cooked to perfection, it can be a little too fishy. But the benefits in a protein that is naturally loaded with minerals, vitamins and heart-healthy omega-3 fatty acids just can’t be ignored. This is a fish you need in your diet. Period. Over the years I have developed quite a few ways to eat Alaska Salmon, but this recipe is by far my favorite.

Alaska Salmon

Simply sear the salmon for four minutes on one side, then another three on the other in a hot skillet with some EVOO. After they have a nice golden crust add butter, garlic, lemon juice and fresh-cut basil and you’ve got yourself a winning combination. We love it, and I’m one of those picky “funny about texture” skeptics. This is the best way to make perfectly flaky salmon that even the biggest critic can enjoy!

Ingredients

  • 4 six-ounce pieces of (skinned) Alaska Salmon
  • 1 Tbsp of EVOO
  • 2 Tbsp of butter
  • 3 Sprigs of fresh basil
  • 1 head of garlic minced
  • 1/3 cup of fresh squeezed lemon juice

Instructions

  1. Pat the salmon steaks dry, then season with salt and pepper on both sides. Sear for four minutes undisturbed on one side and two minutes on the other. Add lemon juice, butter, garlic and let simmer for five minutes and sprinkle basil leaves.
  2. Serve and enjoy!
