Once the quinoa is cooked (about twenty minutes on the stovetop, or only ONE MINUTE in your Instant Pot), simply mix with the rest of the ingredients. Set your oven to 375 degrees and grease your mini muffin tin pan. Scoop a ‘heaping’ tablespoon of the mixture into each slot and bake for 15 minutes. Take it out of the oven and sprinkle some cheese on top then add to the oven to broil for literally 30 seconds.
Some folks don’t like the crunchy cheese ends, but I love them.
