My obsession with Quinoa is well documented. I never used to like this seed, until I learned how versatile it was. A healthy source of protein, you can use it in pretty much any recipe, it’s a wonderful substitute for starch and blends well with most flavors. Gluten-Free Cheesy Quinoa Pizza Bites
This simple recipe is a fast favorite. I first discovered it a few years ago when putting together a healthy Super Bowl soirée. I took favorite recipes and incorporated healthy substitutions to help them feel a bit more “guilt-free.” TruRoots Quinoa is perfect for this kind of situation because you can literally add it to anything. Over the years I’ve added and taken away until these bites were just cheesy enough to get even little hands on them. It would be the perfect for any kids party, and simple enough to include your kids in the cooking process. It’s fun to scoop the balls into the mini muffin tin, sit to watch them rise in the oven (one of their favorite things to do)
My boys love this recipe so much, I usually wind up making an extra batch (or two). I usually add more cheese than required. But hey, you only live once right? Dairy is my weakness and cheese is king in my mind. Everything tastes better with a little ‘extra’ cheese!
Gluten-Free Cheesy Quinoa Pizza Bites
For this easy recipe you’ll need the following:
  • 1 cup of TruRoots cooked quinoa
  • 3/4 cup of shredded cheese (I used sharp white cheddar)
  • 1 egg (already beaten)
  • 1/4 tsp of salt
  • 1/2 tsp of pepper
  • 3 tbsp of your favorite marinara (I used homemade)
  • 1/2 tsp of garlic powder
  • 2 tsp of Italian seasoning
  • a pinch of red pepper flakes (you can omit this ingredient if making for children)
  • marinara sauce for dipping, basil for garnish

Once the quinoa is cooked (about twenty minutes on the stovetop, or only ONE MINUTE in your Instant Pot), simply mix with the rest of the ingredients. Set your oven to 375 degrees and grease your mini muffin tin pan. Scoop a ‘heaping’ tablespoon of the mixture into each slot and bake for 15 minutes. Take it out of the oven and sprinkle some cheese on top then add to the oven to broil for literally 30 seconds.

Some folks don’t like the crunchy cheese ends, but I love them.
