3-Minute Instant Pot Quinoa Salad

Summer is drawing to a close, but it doesn’t mean we can’t fit another light summer dish onto our palette. With school approaching I am always looking for a few nutritious recipes to fit into lunch boxes. In an attempt to remain gluten-free, I decided to give the Village Harvest Organic Ancient Grain Blend a try. Seeing as how I’m pretty much obsessed with my new Instant Pot I decided to cook the Village Harvest Organic Ancient Grain Blend inside the pressure cooker since it only takes one minute. Simply hit the manual mode on your Instant Pot and add one minute to the timer. The Ancient Blend contains millet, quinoa, and buckwheat; a great source of protein and also aides in digestion. The perfect after-school snack, or light and healthy summer salad.

I added some peppers for crunch, green onions for flavor, and creamy crumbled feta. A pinch of lime, salt, pepper and olive oil brought it all together.

Fun Tip: If you overcook your quinoa and it’s clumpy, you can pop it in the fridge on a baking sheet for ten minutes and watch how it separates perfectly for mixing. I accidentally overcooked this quinoa because I accidentally left the valve open on the Instant Pot and had to add a few extra minutes.

Mix together in a bowl for a delicious and flavor-packed salad. The kids love this blend and it holds up well in their lunch box. 3-Minute Gluten Free Instant Pot Quinoa Salad

Ingredients

  • 1 cup of Village Harvest Organic Ancient Grain Blend
  • 1 cup of water
  • 1/2 red pepper diced
  • 1 green onion (chopped)
  • 1/4 cup of crumbled feta cheese
  • 1 tbsp of fresh squeezed lime
  • 1/4 cup of extra virgin olive oil
  • salt and pepper to taste

Instructions

  1. Add grains and water into Instant Pot, cook on manual mode for one minute
  2. Once cooked fluff with fork and add to a bowl
  3. Add pepper, green onion, feta cheese, lime, olive oil, s&p
  4. Enjoy!
